It’s not for nothing that in many countries around the world, cupcakes have been and even remain a mandatory attribute of family holidays and celebrations. The popularity of cupcakes in different cuisines of the world is clearly evidenced by the large number of different recipes.

Among housewives, cupcakes made with sour cream, cottage cheese, kefir, butter, yogurt, milk, and so on are popular. And what’s most interesting is that based on the above ingredients, they have doughs that are completely different in structure and taste. Personally, I really like crumbly and at the same time moist muffins, moderately fatty and not lean.

And even if you have your own proven and favorite cupcake recipe, there is always the opportunity to modify it a little. For example, you can give it a completely different look not only by changing the baking dish, but also by changing the dough filling or decorating the cupcake.

Today I want to show you how to cook a quick and tasty kefir cake with raisins step by step.

Ingredients:

  • Kefir - 1 glass,
  • Sugar - 1 glass,
  • Eggs - 2 pcs.,
  • Baking powder - 1 sachet,
  • Butter - 100 gr.,
  • Raisins - 50-70 gr.,
  • Vanillin - 1 sachet,
  • Wheat flour - 2.5 cups

Kefir cupcake - recipe

Cut the softened butter into cubes in a small bowl. Melt it in the microwave or in a water bath. Let cool.

Place the required amount of raisins in the salad bowl. Pour boiling water over it and leave to steep for 10 minutes.

Pour kefir into the bowl in which you will prepare the cake dough.

Add sugar to it.

Add eggs to these products.

Using a whisk or mixer, beat all dough ingredients into a homogeneous mass. To make the cake fluffy, add baking powder.

If you don't have it, just quench a teaspoon of baking soda with vinegar. For flavor, add a packet of vanillin or vanilla sugar.

Pour in the previously prepared butter.

Mix the kefir dough for the cake. Sift the flour through a sieve or a special cup with a wire rack.

Mix the dough with a whisk until there are no large lumps of flour. Drain the raisins in a colander. Place it in a bowl with flour and roll it in it. Place raisins breaded in flour into the dough. This simple procedure allows the raisins to be better distributed throughout the dough. Mix the dough.

To prevent the cake from sticking to the sides and bottom of the pan during baking, be sure to grease it with a piece of butter or a small amount of sunflower oil. I would like to immediately note that it is most convenient to use silicone molds for making cupcakes. Fortunately, the choice of forms in stores is now quite large and extensive. If you wish, you can put the finished dough not in one mold, but in small molds. In any case, the pans need to be filled about halfway with batter as the cake(s) need to expand in size.

Place the mold with the cake in the oven, heated to 180C. Bake kefir cake in the oven for 20-25 minutes on the middle shelf. The finished kefir cake with raisins should rise twice and at the same time move slightly away from the walls of the pan. But before you remove the cake from the pan, check its readiness with a wooden skewer. It should be dry when removed from the cake.

Remove the finished kefir cake from the mold and place it on a plate. Decorate as you wish. It can be either just powdered sugar, or protein glaze, milk fudge, or melted chocolate. Once the cake is decorated, keep it in the refrigerator to allow the frosting to set before serving with tea or coffee. As you can see, making kefir cake at home is very simple.
